I tried to find a chart with the info you wanted but couldn't find a good one.
Your air should always be between 65 and 80psi. The thicker the metal the closer to the 80 you would go. You should be able to cut nearly as fast as you can move your hand on sheet steel. For steel plate I just use the spray flow as a guide. If it it coming out at too much of an angle you are going too fast.
On my CNC with sheet metal (less than 1/8" thickness) I can run the table at max speed of 95 IPM with no trouble. I run 1/4" stock around 65 IPM. Use the lowest amperage that will cut the material so the duty cycle is longer. If you run at max amps all the time you have to watch the duty cycle and give the machine time to cool.
